Grain Free Overnight Seed Pudding

This project is becoming a sort of food meditation.  My goal is to post a new recipe every Tuesday.  I’m committed to it and the struggle is real.  Between hosting beloved house guests who came bearing delicious gifts and getting our girls off to camp (again), our AC broke down during the heatwave this past weekend so motivation was running low.  Every time I opened the fridge I stuck my limbs inside searching for reprieve and inspiration. And then it hit me like a cold pie in the face!

Friends, I bring to you grain free overnight seed pudding because it’s cool and easy. It’s also a beautiful healthy filling nourishing summer breakfast dish that requires no cooking and feeds a crowd.  You can put it together in 5 minutes at 10pm and go to bed. It lasts for days. Fill up a few small mason jars and bring one with you or serve it family style in the morning.

Add whatever toppings you like and use whatever milk you choose. Sometimes my husband drops a large spoonful into his smoothie too :)

RECIPE

Grain Free Overnight Seed Pudding

Serves 2-4

Vegan, Gluten Free, Grain Free, Sugar Free

Notes: You can easily swap out any milk and sweetener of your choice.

  • 1/4 cup of unsweetened shredded coconut

  • 1/4 cup of ground flaxseed

  • 2 tablespoons of chia seeds

  • 2 cups of almond milk (substitute with milk of choice)

  • A few drops of stevia

Method

In a glass bowl or food storage container combine shredded coconut, flaxseed, chia seeds, and milk. whisk together or stir until all are combined. Add a few drops of stevia to your desired sweetness and stir again. You can easily substitute with honey, maple syrup, monk fruit, agave, or whatever you like just start slow so you don’t over sweeten by accident.

Cover and place in the fridge overnight.

In the morning the pudding will be set and ready to go. Serve with toppings of your choice like nuts, seeds, butters, yogurt, or fruit.
