Weekday Breakfast : Easy French Toast
Back to school!! My kids have started preseason sports and review programs so our lazy summer mornings have come to a grinding halt…I feel jet lagged. The good news is the girls are old enough to make their own breakfast and this easy French toast has been kicking around for years.
Like most of our best recipes it came about without much thought but rather a need to make use of what’s in the fridge with little to no time.
Of course you can use fancy thick cut slices of brioche but I never have that lying around. We use local or gluten free sandwich bread, eggs, and almond milk. Substitutes work really well here as far as bread and milk are concerned. You could also make chia or flaxseed eggs for a vegan version. Add some vanilla and cinnamon and breakfast is ready in less than 10 minutes.
Don’t even bother to cut the strawberries.

P.S. To make this sugar free we use monk fruit maple syrup and powdered monk fruit for dusting.
RECIPE
Easy French Toast
Gluten Free, Dairy Free
Serves 2-4
Ingredients
4 slices of sandwich bread
4 eggs
1/4 cup almond milk
1 teaspoon vanilla extract
1/4 tsp cinnamon
Method
In a shallow wide bowl whisk together your eggs, milk, vanilla extract, and cinnamon.
Heat a grill pan on medium high and add about 2 tablespoon of coconut oil, ghee, butter, or avocado oil.
Coat each piece of bread in the egg mixture and place it in the hot pan. Don’t over crowd, I cook 2 at time.
Flip the bread after the edges have slightly crisped up and the underside is golden.
Serve with syrup and enjoy!
