Steamed Veg

Remember that some of the most simple things in life are in fact some of the best. While I love roasting and sautéing vegetables, steaming them has the power to quiet the mind, soothe your digestive system, and nourish you deeply. You’re going to lose nutrients no matter how you cook your vegetables but steaming does the least damage and preserves many of the vitamins. I wanted to share this sometimes forgotten or mishandled preparation…nothing fancy going on here….just some of your favorite veg cooked to perfection and finished with good olive oil, sea salt and fresh pepper.

OR….you can top off with a squeeze of lemon juice, a sprinkle of toasted nuts and seeds, or some of my favorite seasonings like Furikake or Dukkah which you can find at the grocery store in the spice section.

During the holiday season when we tend to over eat it’s a great idea to bring steamed vegetables into your daily routine for lunch or dinner with a bowl of soup or broth. This will help detoxify your system and keep the negative effects of indulgence at bay.

Steamed Veg

Ingredients

  • 1 bunch broccoli cut into florets
  • 2 sweet potatoes diced or sliced lengthwise 
  • 2 small zucchini sliced lengthwise and cut diagonally 
  • 1/2 delicata squash deseeded and cut into half moons
  • olive oil as needed
  • Fresh squeezed lemon juice (optional)
  • Sea salt & fresh pepper to taste
  • Furikake & Dukkah (optional)

Instructions

  1. Bring a pot filled with an inch or two of water to a boil and set a steamer basket over it with a lid.
  2. Steam the sweet potatoes and squash first as they take the longest, about 5-8 minutes. Transfer to serving dish.
  3. Steam broccoli and zucchini next, 2-3 minutes. Transfer to serving dish.
  4. Finish with a drizzle of olive oil, sea salt, and fresh pepper.
  5. Sprinkle with any of the seasoning mentioned above.

Notes:

The trick to steaming vegetables is to make sure you don't overcook them! Prick with your knife and test for doneness a few minutes in and keep an eye on them. They should be bright and tender but still a little al dente.
